If you are innocent until proven guilty but then you are proven guilty and convicted in a court of law but then your conviction  is overturned and your guilty verdict thrown out without exonerating you in any way....are you innocent or guilty?

Depends upon who chooses to interpret the verdict.

Courts make decisions, but cannot necessarily change peoples minds.

Legally, one would assume that he is no longer deemed to be  guilty....Which is exoneration.

If he did it, he's guilty. It's doesn't matter what the court says, or if we assume innocence as a mechanism of fairer justice. The only thing that truly matters is if he did it.

If I have sex with a prostitute and run away without paying, is that rape?

Nope. The prostitute permitted you to have sex with her/him. Rape is without consent. This has consent.

Though, this would be more similar to shoplifting: You get benefits without paying the price, which is not the same as rape.
